Introduction

This fresh sauce is yummy, low in calories and a great vegetarian alternative for a spaghetti sauce. This fresh sauce is yummy, low in calories and a great vegetarian alternative for a spaghetti sauce.
Number of Servings: 2

Ingredients

    3 Tomatoes
    2 stalks of celery
    2 cloves of garlic
    8 Mushrooms
    1 onion
    0.5 cup of chopped green pepper
    0.5 cup sliced zucchini
    0.25 cup Vegetable broth

Directions

Chop up tomatoes, celery, mushrooms, green pepper, zucchini, and onion. Dice up garlic.

Add half the vegetable broth to a deep pan with tomatoes, onion, celery, garlic and green pepper. Sautee until just celery is just starting to get bright green. Add mushrooms and zucchini with rest of broth and cook until zucchini is tender. Serve over pasta with a little parmesan cheese.

If you want to spice this up, add chilis and cayenne pepper, a little basil and a little bit of thyme. Its very very tasty.
