Introduction

Both return about 2 c. pulp per gallon made.

Ingredients

Base:
3 c. (horchata) pulp
1 c. old fashioned rolled oats
1/2 c. turbinado sugar
1/4 c. Earth Balance
Stir-ins (you could use any mostly-dry ingredient and spice):
1 c. sweetened coconut flake
1 c. semisweet chocolate chips
1/2 c. slivered almonds
1 tbs. grated orange zest (dry or fresh)
Directions
Preheat oven to 350 degrees Fahrenheit; measure Earth Balance into baking dish (for a full recipe, I tend to use a 10.5" x 14.75" Pyrex dish) and place baking dish into oven to melt the spread.
In a large mixing bowl, combine base ingredients with stir-ins; mixing well. Once spread has melted, swirl around baking dish to coat bottom and pour excess into bar mix; combine thoroughly; and spoon mix into baking dish, spreading evenly.
Bake for 20-25 minutes or until center looks dry and knife inserted off center (avoiding chocolate chips) comes out clean.
Makes 40 ~2" square x 3/4" deep bars.
