Ingredients

    3 1/2 pounds of chicken thighs (8 pieces)
    1 cup seasoned dry breadcrumbs
    3 tablespoons curry powder
    1/4 cup yellow mustard
    2 tablespoons honey
    garlic powder
    paprika
    salt
    freshly ground black pepper

Directions

Preheat oven to 375°F. Spray large baking pan with cooking spray. Place breadcrumbs in a shallow dish. Mix together mustard, honey and curry powder. Microwave 30 seconds or until warm enough to mix well. Brush chicken with mixture. Firmly press chicken pieces into breadcrumbs to coat. Sprinkle with paprika, garlic powder, salt, and freshly ground pepper to taste. Place on prepared baking sheet. Bake about 45 minutes.
