Ingredients

*Eggs Made Simple Egg Substitute, 1 cup
Butter, salted, 1 tbsp
Green Peppers (bell peppers), 0.5 cup, chopped
Peppers, sweet, red, raw, sliced, .5 cup
*Old el Paso Refried Beans - Fat Free, 0.5 cup
Cheddar Cheese, .33 cup, shredded
Avocados, California (Haas), 1 fruit without skin and seeds
Red Ripe Tomatoes, .66 medium whole (2-3/5" dia)
Lime Juice, .5 lime yields
*Cumin seed, 2 tbsp
Pepper, black, 1 tbsp
Salt, 1 tbsp
Pepper, red or cayenne, 1 tbsp
Directions
chop bell peppers and sautee in 1/2 tbsp butter.
While these cook, mash avocado, add juice of half a lime, diced tomato, salt, pepper, red pepper & cumin.
In large skillet, melt remaining butter and add eggs.
Once the eggs are set, add cheese, cooked peppers and refried beans.
Fold eggs and flip.
Remove from pan, top with guacamole.
Makes 4 servings.
