Ingredients

5 oz of baked sweet potato
2 egg whites (or 2 tbsp from a carton of whites
3/4 scoop of Vanilla protein powder (you can use any flavor like chocolate, cinnamon roll, etc.)
1/2 tsp of baking powder
1/2 tsp or to flavor of pumpkin pie spice
OPTIONAL - one packet of Splenda if you need extra sweet
Directions
Bake a sweet potato in the microwave or oven and remove the skin. Mash the SP until it is very mashed. Add in 3/4 - 1 scoop of protein powder and stir. Add in the egg whites and make into cake like batter. Add a touch of water if needed.
Mix in the baking powder and the spice. Pour into a non-stick sprayed souffle type bowl or muffin tin and bake at 375 degrees until the edges start to pull away from the bowl - about 20-30 min.
Makes 2 servings if using for a snack. 1 serving if using as a meal replacement.
Can also be made into muffins by making larger amounts of batter, frozen, and thawed on counter or in microwave for 30-60 seconds.
