A quick salad that can be put together for lunch during the week. serve over salad greens with tomato wedges.You can also omit the chicken and serve as a side dish with pork, chicken or fish. Ingredients

3 cups cooked wild rice
1 cup Craisins
1 cup sliced almonds
2 12.5 ounce cans of chicken breast, drained
Dressing:
2 cloves garlic, minced
1 tbsp Dijon mustard
1 tsp Splenda (or sugar)
1/2 cup White Balsamic vinegar
2 tbsp Olive oil
Salt and pepper to taste
Directions
Mix together the first 4 ingredients, breaking up the chicken. Mix together all dressing ingredient and let sit for a few minutes for flavors to blends. Pour over salad. Mix and chill.
