Ingredients

    3 egg whites
    1/2 egg yolk
    2 Tbsp 1% milk
    1 oz mozzarella cheese, grated
    2 servings canadian bacon
    2 whole wheat english muffins, toasted

Directions

Whisk together egg whites, yolk and milk. Spray a nonstick pan with nonstick cooking spray and heat to medium heat. Salt and pepper to taste. Cook until egg sets. Divide egg between the two english muffins. Add half the cheese to each. Fry bacon in pan until warm and browned. Add to sandwiches. Serve with fresh fruit. Enjoy!
