Ingredients

    Ingredients:
    -3 cups cubed cooked chicken breast
    -1 medium apple, finely chopped
    -1/4 cup slivered almonds, toasted
    - 2 Tbs golden raisins
    - 2 Tbs dried cranberries
    - 1/2 cup fat-free plain Greek yogurt
    -1/4 cup apricot preserves (I didn't have so I used orange marmalade)
    -2 Tbs curry powder (I'll half this the next time I make)
    -1 Tbs Dijon mustard
    -1/2 tsp salt
    - 1/4 to 1/2 tsp pepper
    - lettuce leaves

Directions

Combine the first five ingredients, add the rest of the ingredients, toss to coat, serve on lettuce leaves.

I rolled the salad in the lettuce.

Makes 4 servings
