Ingredients

1 cup mashed bananas (about 2-3 bananas)
1/2 cup of mashed carrots
1/2 cup of mashed apples
1/4 cup of sugar
1/4 cup of honey
2 eggs
1/4 cup of plain yogurt
1/4 cup of wheat germ
1/2 cup white flour
1 cup of wheat flour
1 tbsp of cinnamon
1 tsp baking soda
Directions
Preheat oven to 350 degrees
Mash carrots and apples (I cook them first and then blend them) You can also use applesauce instead of a fresh apple
Mix together apples, carrots, bananas, sugar, honey, eggs, vanilla and yogurt. Blend until smooth.
In a separate bowl, mix together flour, wheat germ (optional), cinnamon, and baking soda
Slowly add dry mix to the banana mixture
Pour into a muffin pan (either lined or greased)
Bake for 20-25 minutes-until toothpick comes out clean
