Introduction

Number of Servings: 4

Ingredients

    1 lb. ground veal
    1 Tbsp. butter
    1 minced onion
    1 tsp. salt
    1/2 tsp ground pepper
    1 Tbsp fresh minced parsley (or 2 tsp. dried)
    2 tsp. fresh lemon juice (about 1/2 lemon)
    1/4 cup dry Italian bread crumbs
    1 Tbsp. catsup
    2 Tbsp. low fat milk
    1 egg
    1 cup beef broth
    1/2 cup red wine

Directions

Melt butter and saute onion until golden brown. Combine onions with remaining ingredients, using hands to mix thoroughly. Form into 4 equal sized patties, about 3/4" thick. Heat 1 Tbsp. olive oil in large skillet. Brown patties over medium heat until cooked thoroughly, turning once. Remove and keep warm. In same skillet, add 2 Tbsp. flour and cook for a minute or two to brown. Slowly add beef broth and wine, mixing over medium low heat until thickened. Add veal patties and serve. Makes 4 servings.

    Very Good
    I had ground veal in freezer and had no idea what to do with it. This was great - my patties even broke apart and I'm not big on gravy when it comes anything other than poultry. And my husband says it's good for leftovers on Tuesday. - 1/22/12

    I made it last night for some friends and forgot to add the wine; still good, though!
