Ingredients

    170 Grams Tofu - (half the block)
    1.5 Medium Onion
    2 Red Peppers
    3 Cups Mushrooms
    0.5 Tbsp Extra Virgin Olive Oil
    2 Tsp Soy sauce (low sodium if possible)
    2 Tbsp Peanut Butter

Directions

Cut Tofu as desired
Cut Vegetables as desired

Heat EVOO in non-stick pan, put in all vegetable and stir fry until soft mix in Tofu soy sauce and Peanut Butter, add about 2 TBSP of water so everything gets incorporated evenly.

Stir Fry all ingredients for 5 mins or until everything is cooked to your prefrence.
