Ingredients

1 lb. lean Ground Beef
1 small onion diced (1 cup)
1 large Carrot- julienned (1 cup)
3 Celery stalks- chopped (1 cup)
2 Garlic cloves- minced
1 can (16 oz) Red kidney beans- with liquid
1 can (16 oz) Great Northern beans- with liquid
16 oz can tomato sauce
1 12 oz can V8
1 Tbsp white vinegar
1 1/2 tsp salt
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp ground black pepper
1/2 tsp dried thyme
Directions
Serves 8
Brown beef in large saucepan or soup pot over medium heat. Drain fat. Add onion, carrot, celery and garlic, simmer 10 minutes. Add remaining ingredients and simmer for 1 hour.
OR
Brown beef, drain fat. Place remaining ingredients in crockpot with browned beef. Let cook all day on low or until celery is tender.
