Introduction

We had an excess of pears in our house so I went searching for something to do with them... Number of Servings: 24

Ingredients

    2 cups Whole wheat flour
    1 cup Rolled oats (quick oats)
    1 tsp Cinnamon
    dash of Salt
    2 tsp Baking powder
    1/2 cup brown sugar
    1 cup Milk
    1 egg
    1 TBS honey
    5 pears, peeled and chopped into small pieces.

Directions

Makes 24 Small muffins

1. Preheat oven to 180 C
2. Grease or line 12 cup muffin tray
3. In a bowl, sift flour then mix in dry ingredients (oats, cinnamon, salt, baking powder and sugar).
4. Add milk,egg and honey then stir until combined.
5. Gently combine in pears and stir until completely covered through.
6. Place 1 large TBS into each muffin mold.
7. Bake for 10 - 15 mins until golden and pears are soft
8. Let cool, or if you prefer, eat hot out of the oven.
