Introduction

A vegetarian version of "Cheeseburger Pie" A vegetarian version of "Cheeseburger Pie"
Number of Servings: 6

Ingredients

    1 can black beans, mostly drained
    1 small onion, chopped
    1/2 small green bell pepper, chopped
    2 Roma (plum) tomatoes, sliced
    6 oz. cheese (such as cheddar), sliced
    1/2 cup dry baking mix
    1 cup skim milk
    2 large eggs

Directions

Heat oven to 400 degrees. Coat 9-inch pie plate with nonstick spray.
Combine beans, pepper, and onion in a skillet.
Saute until onions start to turn brown.
Spread in the bottom of the pie plate.
Add a layer of tomato slices, then a layer of cheese slices.
In a separate bowl, stir together baking mix, milk, and eggs until blended.
Pour into pie plate.
Bake at 400 degrees F for about 25 minutes or until knife inserted in the center comes out clean.
Serves 6.

    Incredible!
    Really enjoyed this recipe. I'd make it again. To spice it up, I mixed green chile and tomato (mild) with the beans after I sauteed them. I used a Mexican cheese blend in place of American cheese. - 9/5/11

    Simple, quick, last minute fix. I would suggest this to anyone. I don't like a lot of meat so this is very ideal to casserole lovers. - 5/8/10
