Ingredients

    2 c. flour (I used 1 c. whole wheat, 1 c. white)
    1 1/2 c sugar
    2 tsp baking powder
    2 tsp cinnamon
    1 tsp baking soda
    1/2 cup applesauce, unsweetened
    1/2 cup canola oil
    1/4 tsp salt
    1/4 tsp ground cloves
    4 large eggs, beaten
    1 (16oz - I used 15 oz) can pumpkin

    FROSTING:
    5 Tbls Light cream cheese
    1 tsp milk
    1 1/2 cups powdered sugar

Directions

Combine dry ingredients in large bowl. Stir in beaten eggs, pumpkin, oil and applesauce. Mix until thoroughly combined. Spread onto ungreased 10 x 15 x1 inch jellyroll pan (mine was slightly bigger). Bake at 350 for 20 to 25 minutes, or until a toothpick comes out clean. Cool on wire rack. Mix together ingredients for frosting (you may need a little more or a little less milk). Frost with cream cheese frosting.

    I made these with the half whole wheat, used 2/3 cup egg beaters and replaced two eggs, cut oil in half using fat free greek yogurt instead. - 9/25/09

    This recipe went over very well at Thanksgiving! In fact, I made it again today! This time I reduced the sugar, used more applesauce & less oil, used skim milk, and added allspice & ginger. It cut the calories to 84, the fat to 2 grams & carbs to 16. - 11/28/07

    Very moist and amazing taste. I used applesauce instead of oil and 2 egg whites and 2 egg instead. Will def make again and pass recipe around to friends. - 10/5/10
