Ingredients

PIE:
1/2 lb - Lean ground turkey
1/2 C. - Black beans in water
1/2 C. - Southwest flavored canned tomatoes, diced
2 - Whole wheat flour tortillas (recipe made w/ 10 in low carb)
1/4 C. - frozen corn
1/4 C. - fresh spinach
1/4 C. - diced onion
1 C. - cheddar cheese
2 tbs - taco seasoning
TOPPING/DIP:
1 oz - cream cheese, 1/3 fat
3 oz - fat free greek yogurt
1 tbs - taco seasoning
4 tbs - southwest style tomato canned
Directions
PIE:
In medium sized skillet, cook ground turkey in 2 tbsp of olive oil until no longer pink. Add taco seasoning and 1/4 C water. Cook until water evaporates, about 10 minutes.
Remove meat from pan and set aside. In same skillet spray with cooking spray and cook each tortilla for 1 minute on each side.
In a round pie pan place one tortilla shell. Top with beans, turkey, tomato, onion, corn, spinach and 1/4 cup cheddar cheese. Top with remaining tortilla and cheese.
Cook in oven preheated to 350 for 30 minutes or until cooked through.
SAUCE/DIP
In a small bowl combine all ingredients and mix well. Refrigerate until ready to use.
SERVING:
Cut pie into four quadrants. Top with 1 Tbs of cream cheese dip.
