Introduction

This is a slightly modified version of a Trader Joes prepackaged salad. This serves about one. This would also be great with a little low-fat mozzarella or Parmesan; or a little diced cooked chicken breast to make a meal salad. Ingredients

    1 cup Romaine lettuce
    1 cup Spring Mix lettuce
    1 tbsp sliced black olives
    1 tbsp slivered toasted almonds
    3 Hearts of Palm
    2-3 artichoke hearts
    5-6 cherry tomatoes
    1 tsp - 1 tbsp golden raisins

Directions

Slice hearts of palm into several circular pieces; cut artichoke hearts into quarters. If desired, slice cherry tomatoes in half.

Place lettuces on a bowl & mix; on top sprinkle the raisins, almonds, olives, tomatoes. Add the hearts of palm & artichokes.

Use any italian-style dressing or any dressing of your choice.
