Introduction

Moist, lightly sweet, yummy muffins without flour or added sugar! Moist, lightly sweet, yummy muffins without flour or added sugar!
Number of Servings: 6

Ingredients

    Wet:
    1/2 cup nonfat milk
    2 tbsp canola oil
    1 cup mashed banana
    2 egg whites

    Dry:
    1/2 tsp cinnamon
    1/8 tsp nutmeg
    2 tsp splenda no-calorie sweetner
    1 tbsp baking powder
    2 1/4 cups oat bran

    1/2 cup raisins

Directions

Preheat oven to 425 degrees and spray a muffin tin with Pam or equivalent.

Soak raisins in warm water for about 10 minutes or so while preparing the rest of the recipe.

Combine all of the dry ingredients in one bowl and mix well and then combine the wet ingredients well in another bowl.

Pour the wet mixture into the dry and stir well (I do it with a fork). Add soaked raisins (without the water!) and mix again. Pour into muffin tins and bake for 15-18 minutes or until golden brown.

Makes 12 muffins.
