Ingredients



    * Ground beef, lean, 8 oz (remove)
    * Ground beef, lean, 8 oz (remove)
    * Green Peppers (bell peppers), 453 grams (remove)
    * Onions, raw, 1 cup, chopped (remove)
    * Red Ripe Tomatoes, .5 cup, chopped or sliced (remove)
    * *McCormic Meat Loaf Seasoning, 3 tsp (remove)
    * Bread crumbs, dry, grated, plain, 1 cup (remove)
    * Egg, fresh, 1 extra large (remove)
    * *Brown Rice, long grain, .25 cup (remove)

Directions

Preheat oven to 375
Chop onion and tomatos.
Wash peppers, chop the tops off and remove the seeds.
Spray a glass baking pan with cooking spray.

Combine meat, onion, tomatos, seasoning mix, rice and egg. Add in enough bread crumbs to make the mixture hold together.

Scoop the meatloaf mixture into the peppers and then place the peppers into the baking dish. Arrange the peppers so that they stand up but do not touch eachother.

Top the mixture with some ketchup or other meatloaf topping.

Bake in the oven for at least 45 minutes. Use a meat thermometer to check the temp. Continue baking until the internal temp reaches at least 160 which is the safe temp for portk.
