Ingredients

    2 (10-oz) cans red enchilada sauce
    2 t paprika
    1 t tabasco
    2 T cider vinigar
    1 T chili powder
    3 c cooked and shredded turkey
    8 hamburger buns or flour tortillas
    1.5 c shredded cheddar cheese
    1 c finely chopped red onion
    1/3 c finely chopped cilantro
    2 avocados, sliced

Directions

1. In a 5-6 quart heavy pot, combine and warm enchilada sauce, paprika, tabasco, vinegar and chili powder. Add turkey, combine then bring to a boil.
2. Reduce heat to med-low and let simmer for no more than 30 min, or until heated through. Be careful not to overcook turkey.
3. Serve mix over buns or wrapped in tortillas
4. Garnish w/ cheese, onion cilantro and avocados!
