Introduction

a sweet and savory slow cooked pulled pork. a sweet and savory slow cooked pulled pork.
Number of Servings: 8

Ingredients

    2lbs pork tenderloin
    8oz root beer
    16 tablespoons Sweet Baby Ray's Honey BBQ sauce

Directions

place pork in slow cooker and pour root beer over top.
cook for 6-8 hours ideally.
pour out root beer and pork juice.
shred pork with forks and mix in BBQ sauce.
continue to cook for a few minutes to warm pulled pork mixture to the temperature of your liking.

to adjust recipe. add 2 tablesspoons sauce for every 4oz of uncooked pork. in the calorie count listed I used two tenderloins for a combined weight of 34 oz, so a little more than 2lbs. i added an extra tablespoon of sauce to account for the extra 2oz, for a total 17 tablespoons. I did not adjust the root beer amount because it was just a small amount. this yielded 8.5 servings. a 2lbs loin would produce 8 servings, 1 serving per 4 oz of meat.

this recipe does not include the calorie count for your choice of bun.my husband prefers whole wheat hamburger buns, I prefer orowheat sandwich thins for a lower calorie alternative.

    This is sooo good. I use Diet Root beer. You can use any BBQ sauce you wish. We use "Sticky Fingers" for about half the calories of Sweet Baby Rays. This is one you really, really should try!! - 3/23/11
