Very easy and very good! I also l ike that there is no added sugar - only what is naturally in the prunes and of course the molasses.

Ingredients

    2 cups whole wheat flour
    2 t. baking powder
    ½ t. salt
    1 cup chopped pitted prunes (make sure you measure the 1 cup AFTER chopping)
    1 egg, beaten
    ¼ cup oil
    ½ cup molasses
    1 ½ cups milk (you can use whole milk, but I only had 1% on hand which worked just fine)

Directions

Preheat oven to 400. Combine flour, b.p., salt and prunes in a bowl. Stir together egg, oil, molasses and milk in another bowl. Combine the two until just blended. Spoon into greased muffin tin. Bake 20 – 25 minutes or until toothpick test shows done.
