Easy quick meal. Helps if you prep shredded chicken before hand. A little high in sodium so watch whole days intake. Could probably only use 1.5 jars on sauce and you can also substitute whole grain pasta. Easy quick meal. Helps if you prep shredded chicken before hand. Ingredients

    Chicken Breast, no skin, shredded 24 ounces
    Spaghetti Sauce, Classico Tomato & Basil, 1 jar
    Mozzarella Cheese, part skim milk, 8 oz (1 cup)
    Baby Carrots, raw, 10 medium
    Japanese Style Bread Crumbs, Panko, 1 cup
    Spaghetti, cooked (pasta), 1 box

Directions

Boil pasta according to directions. Boil chicken & shred. Puree carrots. Mix pasta, chicken, chopped fresh basil (opt) and Italian spices (opt) add to casserole dish. Mix carrots with marinara. Pour over chicken/pasta. Sprinkle with mozzarella cheese then panko bread crumbs. Spray with cooking spray. Top with Italian Seasoning. Bake at 350 for 35 min.

    Sounds tasty, I would not use panko:diet restrictions, but still sounds like a great dish, even for leftover pasta and carrots! - 5/17/10
