Ingredients

    1 Tbsp canola Oil
    1/4 cup onion, diced
    1 chicken breast, diced
    1 tsp curry powder
    1/2 tsp chili powder
    1/4 tsp salt
    1/4 cup water
    1 cup white rice, cooked
    1 cup frozen peas and carrots

Directions

Heat oil in frying pan or wok over med-high heat. Add diced onions and stir fry for 1 minute. Add chicken and spices and water; stir fry for 1 minute. Stir in rice and frozen vegetables. Heat through.

Optional: add 1 scrambled egg for an additional 35 calories, 4 grams fat and 3 grams protein per serving
