Ingredients

    1/2 cup whole wheat pastry flour
    1/4 cup ground flax
    1 tbsp baking powder
    1/2 tsp salt
    1/2 cup sugar
    1 tbsp chia seeds mixed with 3 tbsp water
    1/2 cup unsweetened applesauce
    1 tsp vanilla extract
    2/3 cup Almond Breeze unsweetened Vanilla
    1 cup frozen blueberries

Directions

Preheat the oven to 350 degrees. Combine chia seeds in water until it forms a gel-like substance. Combine the dry ingredients in a large bowl and mix to combine. In a seperate bowl, combine the wet ingredients. Combine ingredients and add blueberries.

Bake for between 15-25 minutes.

Makes 12 muffins/

    The ingredients on this recipe are incorrect - it should be 1.5 cups flour, not 0.5 cups. Also, it says it makes 22 muffins which seems an odd number for recipes. - 9/4/10

    Definitely could taste the whole wheat flour, make sure to use 1 1/2 cups flour as previous comment said. Will make again. Maybe sub other frozen berries in for blueberries. - 9/29/14

    wish I had read the comment about the amount of flour being wrong. It did seem like it was not enough when I was making them. No wonder they wouldn't firm up and were rubbery. - 11/16/13
