Introduction

I adapted this from other recipe on here, since I only had the sausage on hand..give it a whirl.. I adapted this from other recipe on here, since I only had the sausage on hand..give it a whirl..
Number of Servings: 3

Ingredients

    1 Tbsp Olive Oil
    1/5 small onion, chopped
    1 c Minute Brown Rice
    1/2 tsp Tabasco Sauce
    1/2 c V8 juice(use spicy if you desire)
    2 cloves of garlic, minced
    1 c canned diced tomatoes, no salt added, undrained
    1 tsp creole seasoning
    1 c low sodium chicken broth
    8 oz turkey polska kielbasa, sliced in approx 1/2-1" slices

Directions

Add oil to large skillet, add garlic and onion, cook on med hi for about 1 minute. Add sausage, cook til starts to brown. Turn heat down to med, stir in tomatoes, V8, chicken broth, creole seasoning and tabasco. Let cook about 5 min. Add rice and let cook an additional 5 min(until rice is tender)

    The boys in my house LOVE this...They always made the fattening, spicy, in-a-box jambalaya, but when I made this healthy alternative, they threw out the boxed stuff!!! Thanx for this great recipe!! - 3/11/13
