Ingredients

1 package of boneless, skinless chicken thighs
10oz package of frozen broccoli
1 tbsp curry powder
12 oz can mango nectar
Directions
Take a zipper storage bag and pour nectar & curry powder in, add raw chicken. Seal and refrigerate for at least 1 hour.
Preheat oven to 375*F.
Take a good sized pan, grease with olive oil or cooking spray.
Add chicken with juice. Cover with foil and cook for 1 hour.
45 min after putting chicken in, boil water and cook frozen broccoli according to directions. Serve with chicken.

Mmm, yummy and unique! I couldn't find mango nectar, so I used canned mango slices. Marinated the chicken in the mango juice with curry powder and then baked the chicken with the mango slices. Substituted butternut squash for the broccoli. Spiced the squash and the mango slices with cardamom. - 11/14/07
