Ingredients

1 cup broccoli
2 tbsp grated carrot
2 tbs grated red cabbage
2 tbs grated yellow squash
1/4 cup barbecued onions (optional but delicious)
1 Whole Wheat Tortilla or Pita
1 tbsp mayonnaise
1/2 cup finely shredded lettuce
1/2 cup alfalfa sprouts
2 slices avocado
dash of Spike
Barbecued Onions:
2 tsp safflower oil
1 small white onion, sliced
1/2 tbsp Hain barbecue sauce
Directions
Steam broccoli 5 minutes. combine carrot, cabbage and squash and mix thoroughly.
BBQ onions: heat oil in a small skillet. Add onion and saute until they begin to soften. Add barbecue sauce and continue stirring until onion is thoroughly soft. Makes enough for 4 goodwiches, or may be used in a Steak Lover's Salad.
In a hot, DRY skillet heat tortilla until soft but not crisp, turning. If using pita, lightly toast. Spread tortilla with mayonnaise. Start with steamed chopped broccoli and lay a small line of all ingredients. Wrap. May be stored in fridged, rolled in deli paper and served cut in half on a platter for guests. When wrapping, wrap once parallel with line of food, then the 2 sides, then roll. Very drippy and very good.
