    1 head of cauliflower
    1 clove of garlic, minced
    1 Tbs. of Light Butter
    1/4 c. 2% italian blend shredded cheese
    beef broth (to taste, use only if too thick until desired consistency)


steam cauliflower until tender. Put in blender with rest of ingredients until smooth. Add beef broth to taste or until desired consistency.
