Introduction

Chicken legs are affordable, and when you cook them right, they can be a delicious, occasional part of a healthy diet! Chicken legs are affordable, and when you cook them right, they can be a delicious, occasional part of a healthy diet!

Ingredients

    10 chicken legs, skin removed
    1 C whole wheat flour
    15 whole wheat saltine crackers, crumbled
    1 t salt
    1 t garlic powder
    1 t onion powder
    1/2 t celery salt
    1 t dried sage or 1 T freshly chopped sage
    2 egg whites
    3/4 C milk (recipe nutrition figured using 1%)
    2 T olive oil

Directions

Pour 2 T oil in 9x13 baking pan and use basting brush to coat the entire pan.

Combine cracker crumbs, flour, salt, garlic powder, onion powder, celery salt and sage in a shallow dish (a pie pan works well). In another shallow dish, whisk together egg whites and milk.

Dip one drumstick in egg mixture and then dredge in flour mixture being sure to coat all sides. Place in baking dish alternating the direction of the drumstick so they'll all fit.

Bake at 375 for 45-60 minutes.

1 serving = 1 drumstick

    I cut the recipe down to a third as I only did 2 full chicken legs. I also used baked hummus chips instead of of the crackers. - 11/14/10
