Ingredients

1/2 aseptic package silken, lite firm tofu
1/3 cup sugar
1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon Salt
1 cup almond dream original milk, divided
1 teaspoon vanilla
1 1/2 cups Dole Dark Sweet cherries, Thawed and drained
Directions
Preheat oven to 425 degrees. Lightly grease a 9 inch pie dish with margarine or oil
In a food processor, puree tofu and sugar until smooth, add flour, baking Powder, salt and 1/2 cup milk. Puree until smooth. Add remaining 1/2 cup milk and vanilla and process until smooth.
Pour batter into prepared pie dish and sprinkle cherries evenly across top of batter. Bake for 15 minutes at 425 degrees, then lower the oven temperature to 350 degrees and bake for an additional 20-25 minutes, until edges of clafoutis are set and middle is still a little jiggly. let cool on a cooling rack for at least 25 minutes before serving. Best served warm. Store leftover clafoutis covered in the fridge.
