Introduction

This is a great fresh meal you can eat cold. refrigerate and eat all week. Great salad and side dish. You can scoop the tabbouli with romaine lettuce leaves and enjoy !! Ingredients

    Bulgur is cracked wheat get 1 cup and place in bowl.Add 1 cup of cold water to bulgur. Chop and dice 2 medium onions, 4 tomatoes,3 cucumbers, 2 green onions(scallions) , 2 bunches of parsley chopped very fine, also juice of fresh lemons 3/4 cup, add all to bowl. Now add your spices: 1 TBSP spearmint leaves( if u cant get fresh use crushed dried mint leaves version),1 tsp seasalt,1/4 tsp black pepper, 1/2 teaspoon paprika, 1tsp allspice, 1tsp SUMAC( middle eastern spice), I( also add 1/4 -1/2 tsp of Aleppo red pepper spice optional ). Add olive oil 1/2 cup.

Directions

Mix all ingredients together until well blended.Refrigerate for a minimum of one hour. Just before serving stir the salad and serve in bowls garnished with romaine lettuce leaves . ( optional serve Pita bread wedges toasted)
Makes 8 one cup servings.
