Introduction

Ingredients

    2 lbs. (17-21 count) shrimp, peeled and deveined
    good olive oil
    salt and freshly ground pepper
    1 lb. pasta
    4 Tbs. unsalted butter, melted
    2 lemons, zested and juiced
    1/4 tsp. red pepper flakes (or adjust to yout liking)
    1/4 c. parmesan cheese (optional)

Directions

Preheat oven to 400 degrees. Place cleaned and deveined shrimp on lined cookie sheet and toss with 1 Tbs. of olive oil , salt and pepper. Make sure they are in single layer and place in oven just til pink and cooked through-8 min. or so.

Meanwhile, drizzle small amount of olive oil in in large pot of salted and boiling water and add pasta- I used whole wheat angel hair. Cook pasta until al dente. Reserve 1/2 or so of the pasta water, then drain off the remainder. Quickly toss pasta, with the melted butter, 1/4c. of olive oil, zest from the two lemons, and juice of 2 lemons. Salt and pepper to taste. I add a 1/4 tsp. of red pepper flakes as well for a little extra flavor. If needed, add small amount of reserved pasta water to consistency you prefer. Add shrimp and serve.

    This is SO darn good! My BF and I love it! It's also become a standard way to prepare shrimp because it's perfect every time. We're having this tonight (sans the pasta) with roasted broccoli and green beans. YUM! - 1/2/11
