    3 yukon gold or red potatoes sliced medium
    1 medium zucchini sliced medium
    1 large onion sliced medium
    1 large bell pepper, sliced
    6 oz potabello mushrooms , sliced
    1 tbls extra virgin olive oil
    1 tsp garlic powder
    1 tsp italian seasoning
    salt and pepper to taste


combine vegetables, coat with evoo and seasonings, place on cookie sheet
bake 400 degrees for 20 to 30 minutes or until browned and potatoes are soft
about 4 servings

    This was super easy and tasted great! I added carrots and the kids loved them. Potatoes should be cut up smaller because they do take longer to cook than other veggies. - 4/20/09

  • We loved this recipe--my husband wanted me to add that he thought it was the best ever. It is always a plus when your husband loves what you cooked. It truly was incredible - 9/9/13
