    * Feta Cheese, 0.5 cup, crumbled (remove)
    * *Organic Meadow 0.5%MF Pressed Cottage Cheese, 0.5 cup (remove)
    * Leeks, 0.75 cup (remove)
    * Red Ripe Tomatoes, 2 medium whole (2-3/5" dia) (remove)
    * Mushrooms, fresh, 1.5 cup, pieces or slices (remove)
    * Spinach, fresh, 2 cup (remove)
    * *Peppers, sweet, red, fresh, 1.5 medium (approx 2-3/4" long, 2-1/2" (remove)
    pinch of pepper chili garlic basil to spice

400F 25-30min until center is set and edges brown

cook vegetables in fry pan until tender and add to remaining ingredients
let set 5 min then slice and serve
