    2 egg whites
    1 slice tomato
    1 wedge light laughing cow swiss cheese
    1 english muffin


Toast the muffin, cook the egg whites to taste. Spread some of the Swiss cheese on the muffin, if desired. Lay the rest out on the egg white and allow it to melt a little. Fold the egg white around the cheese into a size appropriate for the muffin. Place egg and cheese on the muffin, top with a slice of tomato.

    This is a really great recipe. The light creamy swiss from laughing cow feels indulgent. I used a Thomas multigrain light english muffin. Great stuff! Thanks for sharing. - 8/14/10
