Ingredients

    Splenda Brown Sugar Blend, 1/2 tsp. (3tsp=1tbsp), 12 servings

    Baking Powder, 2 tsp (or 1 tsp. Baking Soda)

    Whole Wheat Flour, 1.5 cup

    1/2 cup Quaker Old Fashioned Oatmeal (not instant)
    Raisins, Sunmaid (Baking), 0.25 cup

    Banana, fresh, 2 small (6" to 6-7/8" long), mashed

    2 cups of McIntosh apples, slice thin, chopped, mixed with cinnamon, 1 tbsp. light canola butter, and microwaved for 10 minutes

    Canola oil, Wesson brand (1 Tbsp) 4 TBSP=1/4cup, 4 serving

    Milk, nonfat, .5 cup

    1 tsp. Vanilla extract

    Optional: chopped nuts (not counted in calories)

Directions

Makes 8 servings

Preheat oven to 450F.

In one bowl, combine all dry ingredients. Mix thoroughly using a whisk until completely blended.

In another bowl, mash and beat bananas until smooth (the consistency of pudding). Add apples, oil, milk, and vanilla, and blend..

Combine dry ingredients with banana mixture until thoroughly blended.

Fold in raisins.

Spray a glass loaf pan lightly with Pam baking oil, and pour in batter.

Bake 30-45 minutes, or until top is brown, and a butter knife slides easily and cleanly around the edges of pan. Cool.

When pan is cool enough to handle, turn loaf out onto a cookie sheet, then onto a platter (so it is upright once more).

Cut into 8 even slices. Serve warm, or cover, and refrigerate.
