Introduction

This is a great salsa served with tortilla chips or in tacos. This is a great salsa served with tortilla chips or in tacos.
Number of Servings: 16

Ingredients

    2 (15 oz) cans black beans, drained and rinsed
    2 (15.25 oz) cans whole kernel sweet corn, drained (can substitute frozen corn)
    1 (14.5 oz) can diced tomatoes, drained (can substitute 2-3 large fresh tomatoes, chopped)
    1 (1.25 oz) packet taco seasoning mix
    1 very finely chopped jalepeno pepper
    1 bunch fresh cilantro, finely chopped
    1/2 cup finely chopped red onion
    2 limes, juice of

Directions

In a medium to large bowl mix the corn and taco seasoning mix. (If you're using frozen corn this will give the corn time to thaw while you're preparing the rest of the ingredients.) Gently mix in the rest of the ingredients.

Try to make 2 or 3 hours before you plan to serve the salsa so the flavors have time to mix. Makes 16 servings.
