Burgers
1.25 lbs Ground turkey, 93% lean, 20 oz
2 TB diced Celery
.25 c diced Onions
1 tsp minced Scallions
3 cloves minced Garlic
.5 tsp kosher Salt
.25 tsp black Pepper
.25 tsp rubbed Sage
.25 c Bread crumbs
.25 c Egg beaters (one egg equivalent)
.25 c Skim Milk,
Filling
6.3 oz Brie
6.3 oz fat free Cream Cheese
1.5 tsp kosher Salt
1 tsp black Pepper
Directions
grind turkey w/ fine plate on meat grinder. blanch onion & celery & cool quickly; drain well.
add, along with scallions & garlic, to the meat mixture.
blend the dry ingredients with the crumbs & mis w/ the egg & milk; add to the meat.
Mix on low speed w/ paddle attachment until well blended. From 2-oz burger patties & chill to 40 degrees.
For the filling, add all ingredients to a mixer w/ paddle attachment; blend until smooth.
spread 1/2 oz of the filling onto a patty from center to 1/4 in from the edge. place a plain patty on top of the cheese-topped patty & pres the edges together to form a burger w/ a 4-6 in diameter
Chill for at least 2 hours
Grill to 150 degrees. Don't press while cooking.
