Ingredients
-
-Enough bone-in chicken to serve your family (nutrition facts based on 2 thighs and 2 drumsticks making 4 servings)
-One jar barbecue sauce of your choice
-One can Diet Pepsi or other carbonated soda
Directions
I saw lots of other "cola chicken" recipes, but none with barbecue sauce the way we make it! Most of them seemed complicated and long. My mom's recipe is quick, easy, and a huge crowd-pleaser! (I TOTALLY impressed my future-inlaws when my husband and I were still dating.) Here's how we make "Pepsi Chicken" in our house:
-Heat electric skillet to 350.
-Coat bottom of skillet with barbecue sauce (by pouring a little, nothing too fancy)
-Place bone-in chicken in skillet (not recommended for boneless, skinless chicken breasts, they dry out too much)
-Cover chicken in barbecue sauce and one can of soda (we usually use a little more than half a bottle of BBQ sauce)
-Cover skillet and cook 20-30 minutes, turning halfway through (20 is enough for most medium-sized pieces of chicken).
-Serve with rice and vegetables!
Tips:
-Any kind of soda will work--this is a great way to use up icky generic-brand sodas from large parties
-Be careful when opening skillet lid--it will be steamy!
-Always cut into chicken before serving to make sure it's cooked through
-Use two cans of soda when cooking more than 6-7 servings, and a little more BBQ sauce. This will require closer to 30 minutes
