Ingredients

    Cooking spray
    3 garlic cloves, minced
    4 c. fresh spinach
    1 tsp smoked paprika
    6 oz. cooked chicken breast, no skin
    1/2 c. fat free refried beans
    10 oz. Kroger green enchilada sauce
    7 Ole small flour tortillas
    3/4 c. fat free cheddar cheese, shredded

Directions

Heat a large skillet over medium heat. Coat with cooking spray. Add garlic and cook 1-2 minutes or until fragrant. Add spinach and cooked chicken; sprinkle with smoked paprika. Cook until spinach wilted. Remove from heat.

Preheat oven to 375 degrees.

Add 1/4 c. of enchilada sauce to bottom of shallow baking dish. Spread 7 flour tortillas with refried beans (about 1 tbsp per tortilla). Top with spinach-chicken mixture. Roll each tortilla up and place seam-side down in baking dish. Repeat for each tortilla. Top with remaining enchilada sauce and sprinkle with cheese. Cover dish and bake for 20 minutes or until cheese melted.
