Ingredients

    1/2 cup cooked white kidney beans
    1 tbsp wheat bran
    1/4 cup plus 2 tbsp skim milk
    1/3 cup soft margarine
    3/4 cup whole wheat flour
    1/2 cup sugar
    1/3 cup unsweetened cocoa powder
    1 egg
    2 tsp vanilla extract
    1/2 tsp baking soda

Directions

Preheat oven to 375 F.

Put the white kidney beans, wheat bran and 2 tbsp milk into a food processor and puree until well blended. Set aside.

In a large bowl, beat the margarine, flour, sugar, bean puree, cocoa powder, the remaining milk, egg, vanilla, and baking soda until combined.

Drop the batter by tablespoon onto a baking sheet lined with parchment paper. Bake until firm to the touch, about 10 minutes. Let cool on a rack.

Makes 24 cookies.
