Introduction
This is the perfect dessert to have on a hot summer night. Cool, creamy, refreshing AND if you substitute Splenda for sugar you save yourself many calories! Ingredients

Egg Yolk, 8 large
Splenda, 1/2 cup
Lemon Juice, 1/4 cup
Lemon Zest, 1 tsp
Lime Juice, 1 tsp
Limoncello, 2 tbl
Sugar Free Whipped Cream, 3 cups
Directions
Mix the splenda, the egg yolks, lemon juice, lime juice, limoncello, and salt in a large bowl.
Set bowl over pan of simmering water, be careful to not let bowl touch water. Whisk until mixture is thick and creamy, like custard.
Remove from heat and place bowl in another pan full of cold water and ice, this time the bowl can touch the water, cool completely.
Fold whipped cream into custard, add lemon zest.
Place mixture in a loaf pan that has been sprayed down with cooking spray and lined with plastic wrap. Cover loaf pan with plastic wrap when mixture is inside and freeze for 5+ hours.
To serve, invert on plate and slice 8 pieces.
