Number of Servings: 6

Ingredients

    - Black beans, 1 can
    - Pinto beans, 1 can
    - Yellow corn, 1 can
    - 1 Jalapeno pepper, chopped
    - 1 Small Red Onion, chopped
    - 4 Tomatos, chopped
    - 6 Tomatillos, chopped
    - 1 Avocado, chopped
    - 3 Garlic cloves, chopped
    - 4 tbsp Cilantro, chopped
    - 4 fl oz Lemon Juice
    - 2 tbsp Olive Oil

    Salt and Pepper to taste.

Directions

Chop all the veggies, put in a big bowl. Drain and rinse all the canned items, add to the big bowl. Add lemon juice and oil, mix together. Salt and Pepper to taste. Makes at least 6 servings, depending on serving size.
