Ingredients

3 eggs
1 cup Heart Smart Bisquick
1 1/2 cup skim milk
1/2 cup lean diced ham
1 cup spinach (either canned or frozen will do)
1/4 cup diced onions
1/2 cup sliced mushrooms
1/4 cup diced green bell pepper
1 tbsp minced garlic
1 tsp Italian seasoning
1 tsp basil
1/2 tsp red cayenne pepper
1 tsp salt
1 tsp black pepper
3/4 cup shredded mozzarella cheese
3/4 cup sun dried tomatoes (dried, not packed in oil)
Directions
Preheat oven to 400 degrees.
Spray round cake pan with cooking spray.
Place diced ham in bottom of pan.
Beat eggs in a medium bowl. Stir in Bisquick, vegetables (except sun dried tomatoes) and spices. I never measure the spices - I just guess-timated. I probably use much more than that.
Pour egg and vegetable mixture over ham. Sprinkle cheese and sun dried tomatoes on top.
Bake 40-45 minutes (until it is set up and golden brown).
Makes 4 servings.
