Introduction

Ingredients

    • 1 grapefruit, peeled and sectioned
    • 2 oranges, peeled and sectioned
    • 1 16 oz. can of black beans, drained and rinsed
    • 1/2 cup red onion, chopped
    • 1/2 avocado, sliced
    • 2 tablespoons lemon juice
    • black pepper to taste

Directions

Combine all ingredients. Serve at room temperature.



Makes 4 servings.

    I changed a few of the ingredients also. Used a can of butter beans, red kidney beans, mandarin oranges and one whole navel orange and red onion. I added 6 large shrimp cut into quarters, along with a whole avocado. I mixed the lemon juice with a Tbs of honey and fresh ground pepper. Very good! - 4/16/09

    This was really great. And definately the most colourful salad I've had. I also tried it with tangerines and pomelo instead of oranges and lima beans instead of black beans. All variants work great. - 3/8/09

    wonderful salad but a warning some medications fight with grapefruit so be aware. Check with you drug phamplets or your pharmicist as it interfers with cholesterol drugs and anti-rejection drugs. Be happy and safe.
