Number of Servings: 6


    2 Tbsp Olive Oil
    1 Onion, Large, Chopped
    3 Garlic Cloves, minced
    3 Celery Stalks, chopped
    4 Carrots, Large, chopped
    6 oz. Ham Steak
    1/2 tsp. Ground Sage
    1/2 tsp. Ground Thyme
    1/2 tsp. Salt
    1 Cup Lentils, Dry
    6 Cups Chicken Broth


-For lower sodium, use low-sodium chicken stock.
-I think the soup gets better the longer you simmer it!


Makes 6 servings (1 cup+ each)!

Heat oil in soup pot and cook the garlic, onion, celery and carrots until soft - about 10 minutes. Add seasonings and ham and cook for another 5 minutes. Add chicken broth and lentils (rinsed and sorted). Bring to a boil, then simmer on low for about 30 minutes. Add water if it gets too thick. Ready to eat! Also freezes well if you don't want to eat the same thing for a few days! :)

  • Made this tonight and loved it! I didn't have celery, so I used celery seed. I also added a little curry powder and Mexican seasoning instead of the thyme. No other changes, I promise!   • I used a frozen mirepoix blend (carrots, onion, and celery) and multiplied the recipe by 1/2. It was absolutely wonderful and inexpensive. It was filling and the flavors were incredible! - 1/8/11
