Ingredients

    quinoa, 1 cup
    water, 2 cup
    green pepper, 1/2 cup chopped
    red pepper, 1/2 cup chopped
    parsley, dried, 1 Tbsp
    salt, 1/2 tsp
    juice of one lemon
    olive oil, 2 Tbsp
    ground cumin, 1/4 tsp
    cucumber, 1/2 chopped
    cherry tomatoes, 1/2 cup

Directions

Rinse quinoa. Combine with water in saucepan. Bring to a boil and simmer 10 to 15 minutes until done, translucent. Cool.

Combine vegetables in large bowl, add quinoa. Stir in cumin, salt, olive oil.
