Introduction

This is a different take on brown rice This is a different take on brown rice
Number of Servings: 5

Ingredients

    2 cups brown rice
    2 cups stewed tomotoes, drain well
    1 cup parsley, chopped
    1 cup scallions, chopped
    salt and pepper, to taste
    hot sauce, to taste

Directions

In a medium sauce pan, mix scallions and tomatoes. Allow to boil. Add parsley and seasonings.
In a different pan, cook brown rice as directed on box. Once rice is close to completely cooked, add in the tomato mixture. Cook combined for another 2-5 minutes depending on preferred texture.
