Number of Servings: 4

Ingredients

    350 g dried pasta (farfalle, fussilli, orecchiete)
    200 g hot smoked (Atlantic) salmon or ocean trout, flaked
    200 g ricotta cheese
    2 tbsp low-fat milk
    zest of 1 lemon, finely grated
    3 tbsp chopped fresh basil
    4 tbsp grated fresh Parmesa cheese

Directions

1. Preheat oven to 180* C. Cook pasta and cool. Place half in bottom of small shallow baking dish then top with flaked fish.
2. In a bowl, mix ricotta cheese, milk, lemon zest and basil. Spread half this mixture over the layer of flaked fish. Cover with remaining pasta then top with remaining ricotta. Sprinkle Parmesan on top.
3. Bake for 10 minutes to heat through. To finish, place under hot grill to brown topping.
